Composition of pectin-gelatin complexes

Abstract: A method for the detn. of the pectin, galactan, araban, and gelatin in the mixt. was described. The compn. of pptd. complexes of pectin and gelatin depends on the total compn. of the system. There is 20-70% pectin in the ppt. depending on the actual equiv. wt. of pectin. Galactan accompanying the apple pectin in the pectin-gelatin reaction is partially pptd. In the presence of KCl, the amt. of pectin in the ppt. is increased and the amt. of galactan decreased.
