The precipitation of pectin with gelatin. III

Abstract:  The amt. of pectin pptd. with gelatin in relation to the concn. of pectin, gelatin, pH, temp., and the concns. of KCl and FeCl3 is described. The amt. of pptd. pectin is directly related to the concn. of gelatin. The proportion const. increases linearly with increasing H+ activity which agrees with the theoretical analysis of the reaction. At pH 3.90 and pH 3.72 the wt. ratio of gelatin to pectin in the ppt. increases linearly with the value of this ratio in the whole system. At pH 3.40 the wt. ratio of gelatin to pectin in the ppt. is const. The amt. of pectin pptd. with gelatin at 10-30° does not depend on temp. FeCl3 increases and KCl decreases the amt. of pectin in the ppt.
