The Kinetics of Retrogradation of Amylose

Abstract: The retrogradation of amylose in solns. by the detn. of concn. with iodometric titrn. and amperometric indication was described. It was detd. that the retrogradation is a two-step process: the formation of the aggregates in the soln. (analogous to nucleation) and after the phase has been changed, a further growth of the aggregates by the addn. of mols. to their surface. The potato amylose is practically H2O insol. at lower temps.
