Biosynthesis of β-glucans by wheat enzyme extracts

Abstract: Particulate and soluble enzyme extracts were prepared which catalyzed the incorporation of the glucosyl from UDP-Glc into ß-glucans. The reactions required divalent ions, preferentially Mg2+. By partial hydrolysis of these glucans and structural analysis of the disaccharides thereby produced, it was shown that the glucans were essentially ß1→4 linked (cellulose structure) when the substrate UDP-Glc was incubated at low concentration (10-5 to 10-6 M). The glucans were mainly ß1→ 3 linked (laminarane structure) at higher substrate concentration (10-4 to 10-3м).
