Abstract: Procedures for hydroxyethylation of native potato starch, acid hydrolysis of the obtained product, and fractionation by partial precipitation of aqueous solutions of the degraded hydroxyethylstarch with polar organic solvents were elaborated. The individual fractions were characterized by relative molecular mass and degree of substitution.
